A pizza food truck menu should start with how the customer buys the food: a whole pie, a few slices, or a meal at a catered event. Choose that format before ordering an oven because each one changes the dough schedule, packaging, and amount of unsold food you may carry. From there, cost the complete order and check whether the preparation and oven can support the sales you expect.
The example below uses a $4.20 food and packaging cost for one pizza. At $16, it leaves $11.32 after an assumed 3% card fee, before labor and the truck's other expenses. This guide uses that number to explain the pricing, then looks at the dough and service decisions that can change what the business actually earns.

Should your pizza food truck menu offer slices or whole pies?
A whole pie business asks customers to wait for a complete order. That can fit a brewery, neighborhood stop, or private event where people have time to eat together. Your pricing must reflect the size, toppings, and number of people the pie is meant to serve. Make those details clear on the menu.
Slices fit a different purchase. Someone on a short lunch break may want food immediately and may buy only one or two slices. You gain speed at the window by making pizza ahead of the sale. In exchange, you take on the cost of unsold slices and the need to manage holding quality under your approved food safety procedures.
Private events let you plan production around a guest count. They also require a clear promise. Are you serving individual pizzas, circulating slices, or keeping a buffet supplied? A host who expects everyone to eat at once needs a different production plan from a host who expects casual service over two hours.
Choose your starting format by watching actual buying behavior at likely stops. Count how many people have a place to sit, how long they stay, and what competing meals cost. A large crowd is useful only if the crowd has a reason to buy what you serve.
Begin with a cheese pie and a small number of topping combinations that use the same dough and oven process. Record the portion of cheese and each topping before service. Then test whether the vegetable pizza releases enough moisture to change the bake or packaging result, and whether a meat topping needs preparation before it can be used as planned. Sharing dough does not remove those differences between the pies.
Give extra toppings a defined portion and price. If customers can add three toppings, the order still needs to bake properly and fit the intended box. Offer a few combinations that work rather than leaving the cook to repair overloaded pizzas during lunch. The Money
What does a complete pizza order cost?
Start with your recipe, not the price of flour. Dough includes all its ingredients, and a finished order includes toppings, oil, finishing ingredients, and the box. If you provide dipping sauce with every pie, include the cup, lid, and sauce too. Small costs matter when they occur on every transaction.
Weigh cheese rather than relying on a handful. A cook may distribute it evenly and still use more than the recipe allows. Record the weight before service, then use that portion as the standard. Do the same for expensive meat toppings and finishing cheeses.
Worked example
Now consider portion drift. If cheese costs $0.25 per ounce, a four ounce portion costs $1.00. A six ounce portion costs $1.50. That extra $0.50 becomes $50 across 100 pies, without changing anything on the menu board. Before raising prices, confirm that the food leaving the oven matches the recipe you priced.
Separate normal recipe yield (the usable amount obtained from the purchased food) from avoidable waste. A dough batch divided into twenty dough balls should be costed across those twenty portions. If two are later discarded because you prepared too much, record that loss. Do not quietly assume every dough ball sells and then wonder why purchases exceed the recipe forecast.

The Build
How much dough and equipment do you really need?
Dough production sets limits that an oven purchase cannot solve. Write down the recipe, batch size, mixing time, rest or fermentation schedule, storage space, and handling steps. Your plan should explain how dough moves from preparation to a finished pizza without depending on the owner remembering every detail.
Test the recipe in the conditions you will actually use. A dough that behaves well during a quiet kitchen trial may handle differently after transport or during a hot service. Record the conditions and results. Use that information to set a repeatable process rather than making large changes by feel during a rush.
Write a dough count for each service rather than treating dough as one weekly purchase. Suppose two bookings require seventy and fifty pies. At eight dough balls per tray, the 120 pies need fifteen full trays before any reserve. Now measure whether those trays fit in the approved storage arrangement along with toppings. This small calculation can change the size of the refrigerator you need, even when the oven has more than enough capacity.
Refrigeration capacity is part of the production plan. Dough trays, toppings, drinks, and any other chilled ingredients compete for storage. Measure the actual containers and allow room for the equipment to operate as intended. An empty refrigerator specification does not tell you whether tomorrow's complete load will fit.
Choose the oven only after listing your menu, target output, and utilities. Obtain the exact model's installation requirements, operating weight, clearances, energy needs, and service support. Give that information to the people responsible for the vehicle build and approvals. There is no single oven weight or vehicle class that applies to every pizza concept.
Fuel choice also changes the work. Consider storage, replenishment, startup, shutdown, cleaning, and restrictions at intended venues. Include the time required to get ready before the first sale. An oven that produces an excellent pie can still be a poor fit for a short stop if setup consumes too much of the available day.
Discuss the complete process with the relevant local reviewers before the build. The FDA Food Code is a model used by jurisdictions; the requirements that apply to your operation depend on local adoption and rules. Equipment approval, fire review, and vehicle loading should be resolved for your actual configuration.
The Service
Can your crew keep up with the oven?
A bake time measures how long one pizza occupies the oven. It does not automatically equal the time between completed orders. Several pizzas may bake at once. At the same time, stretching dough or packing orders may limit output long before the oven is full.
For example, three usable baking positions with a three minute bake suggest a theoretical 60 pizzas per hour. That assumes continuous loading and no lost time. If the person stretching and topping dough can prepare only 40 suitable pizzas per hour, the oven's theoretical figure is not your sales capacity.
Run a timed service test with complete tickets. Include order entry, topping choices, loading, turning where needed, cutting, boxing, and handoff. Record both pizzas and transactions. A ticket with three pies uses more production capacity than a ticket with one, even if the payment step takes about the same time.
Watch where finished work waits. Dough waiting for toppings points to a different problem from cooked pies waiting for boxes. Move tools and ingredients to reduce unnecessary reaching and crossing. Assign one person responsibility for matching each finished order to its ticket, especially when several similar pizzas leave together.
Include an oven reset, a fresh tray of dough, and a cheese refill in the service test. These tasks happen during real work, even if a short demonstration leaves them out. Record the number of good pizzas finished, including any that need remaking. A burnt pie consumes ingredients and an oven position, so counting it as completed production would exaggerate how many customers the truck can serve.
Use actual results to set a realistic order limit. When bookings or advance orders exceed that limit, offer pickup windows rather than accepting everything at the same time. Explain expected waits honestly. A delayed order that the customer knowingly accepts is easier to manage than a promise your crew could never meet.
For slices, work from the whole pie that had to be made. Suppose a pizza costing $4.20 before labor is cut into eight slices sold at $3 each. Selling all eight brings in $24. Selling only five brings in $15, while the pizza's food cost remains $4.20. Separate slice packaging and payment costs still need to be added. Compare the number of slices actually sold before the holding limit with the full pie cost, rather than assuming all eight became revenue.
The Arithmetic
How do event orders change the dough schedule?
An event booking gives you a headcount, but the service promise tells you when the pizzas must be ready. If guests are eating throughout an evening, production can be spread out. If the host expects everyone to eat after a ceremony, the same guest count creates a much sharper demand. Settle that point before quoting because an extra hour on site does not help guests who all expect food at the same moment.
State whether the booking includes individual pies, shared slices, or a defined buffet service. The dough count follows that choice. One hundred guests do not necessarily mean one hundred pizzas, and a promise of unlimited food needs more explanation than a price per guest. List the serving period, included menu, and how additional demand will be handled. This gives the kitchen a production plan and the host a clear understanding of the service.
Use the example's $11.32 left per pizza only when the event uses that same portion, price, and order costs. Eighty such pizzas leave $905.60 before labor and other expenses. If those listed expenses are $520, $385.60 remains within that calculation. A buffet using different toppings, bulk service, and a package price needs its own figures. Do not copy the street-service result into a catering quote because both happen to serve pizza.
Keep the dough production date and intended service beside the booking. If two events require the same mixing and storage period, count them together before accepting the second job. The issue may be trays and refrigerator space rather than the ability to drive from one venue to another. This is why you review the preparation calendar when a booking arrives, not wait until the day before service.
After the event, reconcile dough balls loaded, pizzas sold or served, remakes, and dough remaining. If 120 were loaded and only 108 became customer portions, identify the other twelve. They may be unused dough, damaged dough, staff food, or remakes. Each has a different implication for the next quote. That record lets you change a specific production assumption instead of simply adding more dough to every booking.
Build your sales forecast from dough capacity and demonstrated service output. If your plan calls for 120 pies per day, show where those customers come from and how the kitchen will produce their orders. Add the preparation hours and storage required for that volume. A forecast becomes useful when the operating plan can explain each number.
